This was a double batch. 4 cups of oatmeal, 5 scoops of vanilla protein, splenda, and cinnamon. The boys and I loved them. Next time I will try adding maybe small amount of Smart Balance PB to see how that does.

This is too funny. The best part is that they are sooooo easy to make, plus they are actually filling. Glad everyone likes them!

Man, I'm glad I checked this thread! These look like supercookies, plus you all made me laugh! It's like a thread full of addicts! hahaha.

I don't think I have any splenda, but definitely want to make these supercookies! Wait, I checked, I have a few packets, I have no idea how old they are, but they are going to have to work!

Now if I can get the GF to like them this is going to be a home run! haha.

Alright, I'm apart of whatever sick religion you people are a part of, worshiping cookies! lol. Made up a batch tonight, kind of a prototype to see how it would all go. I didn't have enough spenda, so I added a little brown sugar on this test run.

I did;
2cups quick oats
1-1/4 cup water
1 scoop chocolate whey
3 packets splenda
1 tsp brown sugar
1/2 tsp cinnamon
1/2 cup "Craisins"

made 7 cookies, 14mins@325

The flavor was great. The Craisins were a great addition to help jazz things up a little. Texture of the cookies was a little on the gummy(I'm not sure how else to phrase it) side, that could be due to the addition of the whey powder, or maybe they needed a couple more minutes in the oven. Just something to help crisp them up a little I guess.

If I have time I might tinker around with them a little more, but overall a big success! Props to Tim and everyone else who pitched in on these CrackCookies!

Even the GF liked them(despite knowing they are healthy), although she then added a little honey to hers. I commented, then backed off to fight another day, hahaha.

These might also be a new snack to bring to work for me too.

...and they are gone. Had one this morning at work and one this afternoon at work. They are great for me to bring along since they are quick to wolf down and not loaded with fat or sugar like a lot of other snacks. Again, Kudos on the recipe!

Another batch in the oven with this variation:

2 cups of quick oats
2 egg whites + 1 whole egg
1/3 cup Peanut Butter
1/2 cup Splenda
A smidgeon of butter flavoring.

Review coming up. I realize I removed some healthy with the PB, but shouldn't be too bad. Wanted a little more backbone to these.

I would think whole oats will work but probably need to let them soak longer.

Review: Improved but still very "light" tasting. Still not enough backbone, but maybe if I get there, then I basically have nothing but a standard unhealthy cookie. LOL! these were good with some milk and the boys liked them too. I'm going to order some of that powdered PB2 and try that at some point. And more eggs/egg whites.

Good night folks!

I agree with that. Or just keep it the same and they might have a heartier texture? Do it Kris! lol.

I am still laughing how everyone is really getting into these cookies.

I will have to do some more tinkering around with them too

I did tell the GF that when I make these the rules change and cookies are now acceptable at breakfast lol.

I can't stop thinking of ways to make these cookies unhealthy. But they would be delicious.
